I found out about this slow cooker chicken recipe a month ago and it already on heavy rotation in my kitchen. Like most people, I love how I can throw it all in a slow cooker, walk away, and have a meal ready to eat. I usually make it for sliders and we love it so much that “Slider Friday” is quickly becoming a tradition around our home. This week, we decided to try it in a salad and it did not disappoint. Plus, it photographed better for my feed, so while I’m highlighting this slow cooker BBQ for a salad, know that it is also phenomenal when paired with Hawaiian rolls. This recipe has 4K+ reviews so you know it’s good.
*Note, I use Primal Kitchen BBQ sauce and Italian dressing along with coconut sugar to make it a little healthier. For the salad, I used romaine lettuce, 2 cups of Beecher’s cheese, 1 red onion, 2 cups of sweet corn, 1 can of black beans, 2 avocados, and a pint of cherry tomatoes. Our dressing was red wine vinegar and olive oil but you could use ranch or additional BBQ sauce as well.
